Sneaky Chocolate Chip Cookies

With Lima beans & carrots- why not?!?!

These are super yummy! When I make these all the kids in the neighborhood come running! My kids eat the heck out of them and are none the wiser- they have no clue I've slipped them some veggies with their chocolate chips! I change this recipe up all the time depending on what I have on hand that day. You could personalize it easy- add raisins, or nuts, dried cranberries, flavorless or vanilla protein powder, etc. 

Ingredients:
- 1 can Lima beans (drained & rinsed) 
- 1 cup brown sugar
- 3/4 cup unsweetened apple sauce
- 1 large carrot (shaved & grated super fine)
- 1 egg white
- 2 tsp vanilla extract
- 1/2 cup oats
- 2 cups all purpose flour 
- 1 Tbsp baking powder
- pinch of salt
- 1 1/2- 2 cups semisweet chocolate chips

Directions:
In a food processor or blender add Lima beans, brown sugar, & apple sauce. Blend until completely smooth. It's a gross color but trust the process. ;)
Then add carrots, egg white, vanilla, & oats. Blend until smooth.
Pour the mixture into a large bowl & slowly add flour, baking powder, & salt stirring gently until all combined. See- still an ugly color- but after all the flour is added it starts lightening up & looking yummier!
Stir in the chocolate chips & any nuts, cranberries, or raisins if you wanted to add those. Spoon onto a cookie sheet (I cover my cookie sheet with parchment paper for easy clean up!) and bake at 350 for 11-13 minutes! Then enjoy! They're my fave when they're still hot!
